Woks are terrific for turning out stir-fry family favorites and can be a lifesaver for busy moms who need to get dinner on the table quickly.
Our woks are enamel coated cast iron with flat bottoms and are sets that include the lid, a stainless steel rack, cooking chopsticks and bamboo tongs. The flat bottom maximizes the surface area that sits on the burner. Here are some tips we believe are important to cooking in a wok:
Prepare your ingredients first. Chop them into uniform sizes for even cooking. The smaller the size the less cooking time. Hard vegetables like carrots, broccoli and potatoes will be tenderer if blanched or given a quick steam in the microwave before cooking in the wok.
For tender proteins, slice meat and poultry thinly and with the grain of the meat.
Dry your vegetables and meat before adding to the pan to prevent them from steaming instead of searing.
Use peanut or canola oil because they can take the high heat without burning.
Always preheat your wok before you add the oil. To see if the wok is hot enough, drop a bead of water on the surface. If it evaporates in seconds, you’re ready to add the oil. Drizzle it down the side and give it a good swirl to evenly coat the entire surface.
